Mardi Gras and Update

Wow, my life has been a bit crazy for the past week.  I finally have some time to sit down and get on my computer.  And so I decided to post a little update and some yummmy looking pictures (sadly, no recipe today).

Last Tuesday I went to see a nutritionist.  I had some skin testing done in the office and thankfully it revealed that I was not allergic to anything we tested.  I was also ordered to have some blood work to test for other allergies.  Who knows when I will have those results.  While it’s nice to know that I am not allergic to certain foods, it still does not answer the question of why I feel so miserable.  So next on the list is seeing a new GI doc to possibly be tested for some things the allergist thought could be wrong.  Unfortunately when working with specialists, it takes a while to be seen, so my apt. isn’t for another month.  Until then, I’ll keep doing what I’m doing and getting through.

Last Wednesday I had orientation at the Art Institute and I had classes Thursday and Friday.  Their orientation was not all that organized and was quite a long day.  I have two main classes that each meet on Thursday and Friday for four hours each.  Unfortunately neither of the classes are lab classes.   Those don’t start until the second quarter; so in April for me.  As boring as the two classes may be, management and supervision and culinary concepts, I like both of the teachers and I am enjoying going to class again.  I also have to take a freshman studies course because everyone has to and it is quite lame, though I like the teacher of it too.

I didn’t have much time to do any baking for myself, but I have a recipe in mind to make tomorrow, my day off, so I will probably post it within a few days.  However, in the past two weeks I did a lot of baking for a party my sister in law was having.  I made strawberry champagne cupcakes, pretzel rolos, and chocolate dipped heart shaped marshmallows.  Apparently they were all quite delicious.

        

In honor of Mardi Gras, my Mom has a New Orleans themed menu planned for she and my dad.  So last night we made beignets.  (See the nice picture below) I really wish I could have ate one, but I would have been so sick.  She and my dad seem to thoroughly enjoy them though.  Tonight she’s making jambalya and bananas foster; I’m having turkey and a veg. 🙂

  1. Hi Kara: you are back in Pittsburgh? I’d love to get together with you sometime…maybe when it gets warmer and we can be outside…go for a walk and chat? I know it’s not pleasant when one doesn’t feel good, I’m praying wellness over you.
